Because Shopify removes the parts of ecommerce that have nothing to do with your product. Hosting, PCI compliance, uptime, security patching and checkout maintenance stop being your problem, so your effort goes into the catalogue and the marketing instead.

Product content still has to be translated by someone who knows your products, which is work you or a translator does rather than an automatic setting.

Yes. Products, variants, customers and order history migrate across, and every old URL is mapped to its new equivalent so search rankings and existing links survive. The parts that need most attention are pricing rules and any custom checkout behaviour, since Shopify is stricter there than WooCommerce.
